A deba bōchō knife necessary for filleting fish.

It is primarily for filleting fish.

It can be used for medium- to large-size fish.

It is a single-edged knife, sharper than double-edged knives.

Single-edged knives are 90% steel, and can be used for tens of years depending on use.

The good thing about Japanese knives is that they last for a long time.

This is because the sides are made of a soft steel that naturally thins by a very small amount each time the knife is used.

(Stainless steel and titanium knives have an extremely hard surface, so only the cutting edge wears away. They quickly lose their cutting quality and become blunt. They are also impossible for an amateur to sharpen.)



No concerning, deep rust will occur if the knife is used daily.

Cherry (waxed) is used for the handle, so it is hard, durable, and difficult to stain.
