A double-edged sashimi knife for general household use.

It is primarily for sashimi, but it can also be used universally for vegetables, filleting fish, and meat.

The steel goes about two thirds of the way in, so the knife will be able to be used for many decades, depending on how it is treated.

The good thing about Japanese knives is that they last for a long time.

This is because the sides are made of a soft steel that naturally thins by a very small amount each time the knife is used.

(Stainless steel and titanium knives have an extremely hard surface, so only the cutting edge wears away. They quickly lose their cutting quality and become blunt. They are also impossible for an amateur to sharpen.)



No concerning, deep rust will occur if the knife is used daily.

Cherry (waxed) is used for the handle, so it is hard, durable, and difficult to stain.
